Summer SaladPrint Recipe
- 2-3 heaping cups of spinach
- 1/2 cup of raspberries/strawberries/blackberries
- 1/2 cup of roughly chopped walnuts
- 1/2 cup of cooked quinoa - cooled down
- 1/4 cup of pumpkin seeds
- 1 large ripe avocado
- 1 tbsp olive oil/grapeseed oil
- 1 tsp apple cider vinegar
- 1 tsp maldon sea salt
Just add everything together in a bowl and mix – I recommend only mixing in half of the fruit and adding the remainder afterwards – you can sprinkle the salt after as well!
You are delicious my little plate of deliciousness...and I shall call you lunch! Summer salads are what it's all about. Light vinaigrette's cascading down a mountain of sweet fruits; lightly tossed between spinach, nutty infusions of pumpkin seeds and walnut...all topped with the earthy staples of quinoa and avocado. Sorry, I disappeared then! Mango and quinoa are amazing additions to any summer salad, as well as walnuts, pecans and pumpkin seeds. Although feta can be a welcome member of any summer salad, I like to avoid cheese. That said, brie can be a wonderful backdrop to strawberries or cherries - it's all about experimentation with ingredients and quantities - you can't go wrong but you can have fun trying!
